Tempura Smelt

Here us my substitute for french fries. Tempura smelt and green beans. Tempura batter makes a light coating on the fish and green beans giving it the perfect texture to match with beer. It is so easy to make and is a lot of fun to enjoy with friends.
Ingredients
1/2 lbs smelt
1/2 lbs green beans
tempura batter mix
water
lemon wedges
3 cups of oil
Mix tempura batter with water until it has a thick consistency. Heat a deep fryer or a cast iron dutch oven to about 350 degrees F. In small batches, dip the smelt in the tempura mix and straight into the fryer. Cook for 4-5 minutes or until brown and crispy. Do the same for the green beans. Garnish with chives. Enjoy with beer, and white wine.
