Pork Belly with Apples (Liempo)

Liempo is a popular dish. It is essentially gilled thick cuts of bacon. Grill on a low fire and allow the fat to render. It is a match with beer. 

To add a little twist to this favorite, I added some spiced apples for a different take. 

Ingredients

2 lbs pork belly

1 Washington Apple

Cinammon stick

star anise

sugar

Cider vinegar

 

Here we go.

Season Pork belly with saly and pepper. You can pan fry on low heat, or my preffered method, bake at 275 degrees F for 30-45 minutes until crisp. 

For the sauce

Caramalize sugar in a pan. Add sugar to a pan and leave in a medium low heat until brown. Add butter, cinammon, and star anise. Place diced apples in the pan and coat with the sauce. Deglaze with vinegar, and add a little water if it is too rich. 

Plate up, and serve. Sauce over the pork and apples.
