Salted Egg Parsley Salad

This is a nice spring salad with some of my most favorite ingredients.

It is simple but is packed with bright flavors.

The salty egg is rich and decadent, perfectly balanced by the tomato and fresh parsley.

The horseradish cream gives a nice zing with a little it of heat.

This salad goes well with grilled fish and chicken. 

Ingredients

1 salted egg

1 roma tomato

1 bunch parsely

olive oil

horseradish cream

lemon zest

 

It is quite simple to prepare. Removing the shell of the egg can be a little tricky. It helps by rolling the egg and cracking the shell into little pieces which makes peeling easier. Assemble the tomato and egg together topped with horseradish crea,. The parsely salad is dressed with olive oil and lemon juice.
