Grilled Fish

Nothing beats the simplicity of grilling fish. Seasoned with salt, pepper, and citrus works perfectly with fish. This is a new way of preparing "inihaw na isda" or grilled fish. Back home you will have street vendors roasting lechon pig, chicken and fish. This dish is an homage to those flavors.
Grilling
Grilling simply means to cook on an open flame. Using an oven is perfect for this. With seafood, it is best to cook it as simply as possible. Fish cooks quickly, but the tricky part is keeping it moist. Cooking the fish on a trivet of orange and coated with butter should keep the fillets nice and moist.
Citrus on fish
Fish and citrus go very well. It has a clean flavor and the acidity brings out the taste of the fish.
Ingredients
4 pieces tilapia fillets
4 blood oranges
butter
salt and pepper to taste
Prep
cut orange rings and lay it out on a baking sheet. Place fish on orange, oil, and season with salt and pepper.
Bake
Bake at 350 degrees or broil for 15-20 minutes. Enjoy.
